5 Ingredient Chocolate Chip Cookies (grain free, Paleo)

This grain free chocolate chip cookie is so easy to make because it only has 5 ingredients. The final result is more of chewy rather than a crispy cookie but it tastes great.

Ingredients

  • ½ cup cashew butter, no sugar added
  • 3 Tablespoons coconut sugar, or Swerve brown sugar sweetener
  • 1 egg
  • ½ teaspoon baking soda
  • ¼ cup Lilly's mini chocolate chips (about 160 mini chips)

Instructions

  1. Preheat your oven to 375 degrees.
  2. In a bowl mix all ingredients together.
  3. Scoop about a Tablespoon of dough for each cookie onto a silpat or parchment paper lined cookie sheet.
  4. Bake for 10 minutes.
  5. Let cool for 5 minutes to continue to set.
