Lemon Garlic Brussel Sprout Chips

Roasting these Brussels sprout leaves in a lemon and garlic dressing gives them such flavor! You can eat them as chips or as a tasty side dish.

  • 1 lb Brussels sprouts
  • 3 Tablespoons olive oil
  • 1 lemon juiced
  • zest of 1 lemon
  • 1 Tablespoon crushed garlic
  • salt and pepper to taste


  1. Preheat oven to 350 F
  2. Clean Brussel sprouts and cut off ends.
  3. Separate as many leaves as possible.
  4. Toss with olive oil, lemon juice, lemon zest, garlic, salt and pepper.
  5. Spray a large cookie sheet with cooking spray.
  6. Put the sprout leaves on the cookie sheet and make sure to even them out.
  7. Bake for 20-30 minutes until brown and crispy.
  8. Serve right away.
  9. Top with grated cheese if you want.
