Shrimp Pasta with Red Pepper Sauce (low carb & Paleo version too)

This shrimp pasta with red pepper sauce is a simple and tasty dinner using red peppers to create a "tomato-like" sauce. You can also eat this sauce with zucchini noodles for a low carb or Paleo dinner.

Ingredients

  • 2 Tablespoons butter
  • 1 onion chopped
  • 3 red bell peppers chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon Better than Bouillon chicken base
  • 1 cup water
  • ¾ lb cooked shrimp
  • 6 oz snow peas
  • 1 lb cooked pasta
  • toasted pine nuts and grated cheese optional as garnish

Instructions

  1. If using frozen shrimp, make sure your shrimp are thawed.
  2. Cook your pasta according to the directions.
  3. Add your snow peas to the pasta and water, 3 minutes before the pasta is done.
  4. Drain and set aside.
  5. In a large saute pan, add your butter and onions. Saute until the onions are translucent.
  6. Add your red peppers, salt, pepper, bouillon and broth and bring to a simmer.
  7. Cover and cook until the peppers and soft, about 5-10 minutes.
  8. Add pepper mixture to a high speed blender and puree until smooth and cream.
  9. Put the pepper mixture back in the pan and add your shrimp. Cook over medium heat unit the
  10. shrimp is warmed through.
  11. Add your pasta and snow peas and mix thoroughly.
  12. Plate and add toasted pine nuts and grated cheese if using.
  13. Enjoy.
