Chicken, Cauliflower, Spinach Meal

These freezable healthy lunches will help you stay on track and save you time. Two delicious and healthy lunch ideas with recipes.

  • 4 small onions thinly sliced
  • 2 Tablespoons of olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cloves of garlic crushed
  • 1 lb of fresh baby spinach approximately 16 cups loosely packed


  • 1 head of cauliflower


For the Spinach

  1. In a large saute pan heat your oil and onions, salt and pepper.
  2. Cook your onions until the are browned a bit.
  3. Add your garlic and mix well.
  4. Add your spinach 4 cups at a time until mostly wilted.
  5. Take off burner and let cool.
  6. Cal = 67 / Fat- 3.7g / Carb = 7.5g / Fiber = 2g / Protein = 2.4g net carbs = 5.5g

For the Cauliflower

  1. Cut cauliflower into pieces and place in a food processor.
  2. Pulse until it looks like little pieces of rice. Do not over process.
  3. You may have to do this in batches. If you have large pieces take them out and reprocess.
  4. Place riced cauliflower into a microwave safe bowl.
  5. Microwave for 8 minutes.
  6. Let cool.
  7. Cals = 25 / Fat=0.3g / Carbs = 5g / Fiber = 2g / Protein = 1.9g net carbs = 3g
