Butternut squash noodles are delicious, especially with Italian sausage and broccoli. A healthy, grain free meal that you'll love.

Ingredients

  • 2 Tablespoons olive oil
  • 4 cups butternut squash noodles (use spiralizer to make)
  • 2 cups broccoli, steamed
  • 2 sweet Italian sausage links
  • 1 teaspoon crushed garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. In a large skillet, take your sausage links out of the casings and crumble and brown.
  2. In the meantime add butternut squash noodles to a pyrex bowl and microwave for 2 minutes.
  3. When the sausage is browned, take out of pan and set aside.
  4. Using the same pan, add the oil and garlic and saute for 1 minute.
  5. Add your butternut squash, broccoli, salt and pepper and saute for a couple minutes.
  6. Add your sausage back to the pan and continue to cook for 1 minute.
  7. Serve and eat and enjoy!
