This turnip fauxtato salad is a great low carb alternative to potato salad (3.5g net carbs). Even if you don't care about carbs, it's a delicious way to eat turnips!

Ingredients

  • 2 cups turnips diced
  • cup mayo
  • 1 Tablespoon vinegar
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon dry mustard
  • ¼ teaspoon celery seed
  • ½ teaspoon sugar substitute I used Splenda
  • 1 hard boiled egg chopped
  • 1 piece of celery chopped
  • 2 green onions chopped
  • paprika and hard boiled eggs to garnish

Instructions

  1. Add your turnips to a microwaveable bowl and cook for 6 minutes or fork tender.
  2. Let them cool.
  3. In the meantime, add the mayonnaise, salt, pepper, mustard, celery seed, sugar substitute and vinegar and mix well.
  4. Add this mixture to the cooled turnips, celery, green onions and chopped egg.
  5. Sprinkle paprika on top if using and garnish with a few sliced eggs.
  6. Refrigerate until ready to eat.
