Peach Scones (gluten free, low carb)

These tasty peach scones are low carb and gluten free. Easy to make and perfect for a quick breakfast in the morning.

Ingredients

  • 1 cup almond flour (not almond meal)
  • 2 Tablespoons coconut flour
  • 2 teaspoons baking powder
  • ¼ cup Swerveor Splenda
  • ½ teaspoon cinnamon
  • pinch salt
  • 2 eggs
  • 1 teaspoons vanilla
  • 1 cup peaches chopped
  • zest of 1 lemon optional

Instructions

  1. Preheat oven to 375 degrees.
  2. In one bowl, beat eggs and add vanilla.
  3. In another bowl add almond flour, baking powder, salt, Swerve and cinnamon.
  4. Add the dry ingredients to the wet and mix to form a dough.
  5. Fold in peaches.
  6. On a parchment lined cookie sheet (or use a silicone mat) divide the dough into 6 pieces and form a circle or triangle shapes.
  7. Bake for 15-20 minutes or until lightly browned.
