Ingredients

  • 1 package pork tenderloin
  • 1 tablespoon oil
  • 1 cup beef stock or broth
  • ½ cup cream
  • ½ cup Asiago cheese grated
  • 1 teaspoon garlic crushed
  • ¼ cup sundried tomatoes chopped
  • ½ cup baby spinach tightly packed and chopped

Instructions

  1. Cut the pork tenderloin into ½ inch pieces and the pound each piece flat.
  2. In a large skillet heat the oil.
  3. Brown the pork on both sides, about 2-3 minutes each side.
  4. Take the pork out of the skillet and set aside.
  5. Add the broth, cream, cheese, garlic and tomatoes to the pan.
  6. Bring to a boil and then lower the heat to a simmer.
  7. Add the pork back into the pan and cover and cook for 10 minutes.
  8. Add the spinach back into the pan and mix until wilted.
  9. Serve as is or over pasta or rice.
