Festive Tomato and Spinach Cauliflower Rice (15 minutes)

This festive tomato and spinach cauliflower rice only takes 15 minutes to make and is a delicious low carb side dish. Cauliflower rice takes on the flavors sun dried tomatoes and garlic and is topped with crunchy pine nuts.

Ingredients

  • 3 cups cauliflower riced
  • 1 tablespoons of olive oil
  • 1 large clove of garlic crushed
  • ½ cup of sun dried tomatoes chopped
  • 1 cup of fresh spinach chopped
  • 2 tablespoons of water
  • ¼ cup pine nuts toasted

Instructions

  1. Add oil to a large saute pan and heat to medium high.
  2. Add garlic and tomatoes and saute for 30 seconds and then add the cauliflower.

  3. Mix well cook for 5 minutes.
  4. Add the water and cover pan for 3 minutes.
  5. Take off lid and taste cauliflower to see if cooked to your liking. I like it a bit al dente.
  6. Add the spinach, mix well and take off the stove.
  7. Sprinkle toasted pine nuts on top and serve.
