Ingredients
4cupsof cucumber noodlesuse a spiralizer or peeler to make noodles
3radishes made into noodles or chopped thinly into sticks
⅓cupred onionvery thinly sliced
1lemon juiced and zested
1tablespoonof rice wine vinegar
¼cupolive oil
1teaspoongrated ginger
2small cloves of garliccrushed
1teaspoonof sesame oil
Instructions
Make your cucumbers into noodles using spiralizer or a hand peeler. You can cut the radishes into noodles too if you have a spiralizer or just slice into sticks.
Slice the red onion very thin and mix with the other vegetables.
In a small bowl mix the rest of the ingredients until well combined.
