Beet & Goat Cheese Stuffed Endive

If you are in need of a quick and easy appetizer, this beet & goat cheese stuffed endive is the way to go. Only a few minutes a couple ingredients to make this beautiful and tasty dish.

Ingredients

  • 2 oz cream cheese softened
  • ½ cup goat cheese
  • ¼ teaspoon rosemary crushed
  • ½ cup beets (cooked and chopped) chopped
  • ½ cup walnuts chopped
  • 16 endive leaves

Instructions

  1. Mix cream cheese, goat cheese and rosemary together.
  2. Separate endive leaves and add a small spoon full of the cheese mixture on the base end.
  3. Sprinkle a bit of chopped beets and walnuts on top.
  4. Refrigerate until ready to serve.
