Holiday Prime Rib Roast with Beet & Horseradish Sauce

If you are making a prime rib roast during the holiday season I have a special tip to make it super easy. I also have a delicious and colorful beet & horseradish sauce recipe that goes great with roast beef.

Ingredients

  • 8 oz horseradish root, peeled & cut into chunks.
  • 1 can small whole beets
  • 2 tablespoons apple cider vinegar
  • ¼ cup beet juice from canned beets
  • ½ teaspoon salt
  • ½ teaspoon sugar

Instructions

  1. Using a food processor with the grating blade, add the chunks of horseradish to grate.

  2. Switch to the standard S blade and add in all of the ingredinets including the horseradish and pulse until everythign is chopped and well combined.

  3. Refrigerate over night before using for maximum flavor. Store in a sealed container in the refrigerator.
