Low Carb Sandwiches using Collard Greens

If you are looking for a keto, low carb sub sandwich substitute, try using collard greens and make a wrap. They are sturdy and make an absolute delicious sandwich using your favorite sandwich ingredients.

Ingredients

Low Carb Sub Sandwich

  • 1 large collard greens leaf
  • 2 slices hard salami
  • 3 slices pepperoni
  • 2 slices ham
  • 2 slices provolone cheese
  • 2 tablespoons red onions, thinly sliced
  • 1 slice tomato
  • 1 tablespoon Italian dressing

Low Carb Turkey Club Sandwich

  • 1 large collard greens leaf
  • 2 slices turkey breast
  • 3 pieces bacon, cooked
  • 1 slice Swiss cheese
  • 1 teaspoon mayonnaise

Instructions

  1. Take one of the collard greens leaves and slice the thick part of the stem horizontally to make the leaf more flat. Also cut a V at the bottom to take out more of the stem. 

  2. Rinse the leaf and place in a large skillet. Cover with a lid and cook for 1 - 2 minutes to make the leaf more pliable. Dry the leaf if damp.

  3. Spread any mayo if using. Then add your ingredients in the middle of the leaf towards the bottom. 

  4. Fold up the leaf to cover the filling. Fold in the sides and tuck under the filling.

  5. Roll up as neat and tightly as you can

  6. NOTE: If you are makign the sub sandwich add the dressing at the end on toppings before you roll. If using may, spread it on the leaf first before add ingredients.
