This low carb broccoli & ham casserole is an easy and delicious recipe to make with leftover ham. Only 5 ingredients needed to make this tasty low carb casserole and each serving has 5.4g net carbs.
Preheat oven to 400 degrees F.
Add cauliflower florets to a small sauce pan and add water until it's just covering the cauliflower. Cook until fork tender then drain the water but keep it as you might need it for the cream sauce.
Add the cooked cauliflower, cream cheese and ½ cup of cheddar to a high speed blender and blend until smooth and creamy. If it's too thick add a little of the reserved water.
Add the ham and broccoli to a baking pan then mix it with the cream sauce. Top with the remaining cheddar cheese. Bake for 20 minutes.
