Ingredients

  • 1 tablespoon olive oil
  • 5-6 lb pork shoulder or butt
  • salt & pepper
  • 1 small apple
  • 24 oz German sauerkraut (I use Aldi's)
  • 1/2 cup water

Instructions

  1. Hit the saute button on the Instant Pot and then adjust to high. As that is heating up, liberally add salt and pepper to the whole roast.

  2. When hot, add the oil to the pot and brown the roast for about 3-5 minutes on all sides. When done, hit the cancel button.

  3. While the meat is browning, either grate the apple or pulse in a food processor. Make sure to take out the seeds but leave the skin on.

  4. When the meat is done browning, pour in the water and then the sauerkraut juice and all. Lastly place in the apple. Cover and push the lever back to seal.

  5. Manually cook for 70 minutes and then let the pressure come down naturally.

  6. Slice the roast and serve on a platter with the sauerkraut.
