If you are looking for an easy low carb breakfast or snack, try these broccoli & cheddar low carb keto waffles. Only a few ingredients and you have a savory, gluten free waffle everyone will love. Only 1.7g net carbs per serving.

Ingredients

  • 2 eggs, beaten
  • ½ cup mozzarella cheese, shredded
  • ½ cup cheddar cheese, shredded
  • 2 tablespoons Parmesan cheese, grated
  • ½ teaspoon onion powder
  • ½ cup broccoli, cooked and finely chopped

Instructions

  1. Heat up waffle iron according to manufacturer's instruction. You may need to grease before using. I like to do so before each waffle.

  2. Mix together the ingredients and when the iron is hot, add a good spoonful to the center of the iron. Make sure to keep them small so they are easy to get out when done.

  3. Eat immediately or freeze for later. To warm from frozen, just microwave for 30 second intervals until heated through.
