These low carb sausage egg muffins are a delicious breakfast on the go. Not only are the low carb, but they are gluten free, nut free and dairy free! Taste one and it will be hard to believe. Only 0.7g net carbs per muffin.

Ingredients

  • 2 links Italian sausage (sweet)
  • 3 eggs
  • 2 tablespoons coconut flour
  • 2 tablespoons ghee, melted (or butter if not dairy free)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasonings

Instructions

  1. Preheat oven to 350 degrees F.

  2. Take the casings off the sausage and break up into little pieces. Add the rest of the ingredients and mix well.

  3. Spray a mini muffin tin with cooking spray and dived the mixture into 14 muffins. Smooth out the mixture once they are in the tin to look nice. 

  4. Bake for 15 minutes and let cool.  Store in the refrigerator.
