Taco Beef, Cauliflower, Peppers Meal

Ingredients
Sauteed Peppers
1 ½
cups
sliced onions

Tablespoons
olive oil
3
sweet bell peppers sliced
I used red, orange and yellow
½
teaspoon
salt
½
teaspoon
pepper
2
cloves
of garlic
crushed
Cauliflower
1
head of cauliflower
Taco Meat
1
lb
ground beef
½
teaspoon
garlic powder
½
teaspoon
onion powder
1
teaspoon
paprika
½
teaspoon
oregano
1
teaspoon
chilli powder
1 ½
teaspoon
cumin
½
teaspoon
salt.
Instructions
For Sauteed Peppers
Heat large saute pan with oil and onions.
Cook for a few minutes until onions become translucent.
Add peppers, salt and pepper.
Saute until pepper become soft.
Add garlic and mix well.
Cook for another minute and then take off burner.
Let cool.
Cals = 106 / Fat = 7.2g / Carbs = 10.6g / Fiber = 2.3g / Protein = 1.6g net carbs = 8.3
For Cauliflower
Cut cauliflower into pieces and place in a food processor.
Pulse until it looks like little pieces of rice. Do not over process.
You may have to do this in batches. If you have large pieces take them out and reprocess.
Place riced cauliflower into a microwave safe bowl.
Microwave for 8 minutes.
Let cool.

For Taco Meat
Spray large skillet with cooking spray.
Add your meat and start to brown it.
When it's starting to brown, add all your spices and continue to cook.
When meat is completely browned, take off burner and let cool.
Cals = 288 / Fat = 17.6g / Carbs = 0.9g / Fiber = 0.4g / Protein = 29.6 net carbs = 0.5g
