Low Carb Brownie Bites

  • 4 eggs
  • 1/3 cup coconut oil
  • 1/3 cup sf maple syrup
  • 2 teaspoons vanilla
  • 1/2 cup cocoa powder
  • 2 Tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoons sea salt
  • 1/3 cup chocolate chips I used a Trader Joe's Dark Chocolate Bar


  1. Preheat oven to 350 degrees
  2. Mix the wet ingredients in a mixing bowl.
  3. Add the dry ingredients except for the chocolate chips.
  4. Spoon into a mini muffin pan. Add a few chips to each brownie bite. I used a Trader Joe's dark chocolate bar that I broke into pieces and add to each section of the tin.
  5. Bake for 20 minutes. You might want to check them at 15 minutes. I felt that mine where a bit over done at 20 minutes.
  6. Let cool completely. Add Cream Cheese Frosting and the freeze.
