Bacon, Brussels & Potato Fry Up

This is quick and easy comfort food that can be a side dish or even a main dish.

Ingredients

  • 4 ounces Bacon (I used Aldi's uncured but any kind will do)
  • 2 cups Brussel Sprouts steamed
  • 4 small potatoes (or 2 large)
  • salt & pepper to taste

Instructions

  1. Chop up the bacon and fry in a pan.
  2. While bacon is cooking, wash and quarter brussels sprouts and then steam for about 4 minutes in the microwave.
  3. Next puncture the potatoes with a fork a few times and microwave for about 4 or 5 minutes tip soft.
  4. When potatoes are done, chop them and add along with the brussels sprouts to the bacon in the frying pan. Mix well and cook til desired brownness. The potatoes and brussels should be mostly cooked ahead of time so whenever you feel they are done frying, they are done.
