Low Carb Cinnamon Panna Cotta

This low carb cinnamon panna cotta is an easy and delicious dessert you can whip up any night of the week. Creamy and smooth, this low carb treat has only 2.6g net carbs!

Ingredients

  • 1 ½ cup unsweetened almond milk I used Trader Joe's
  • ¼ cup heavy cream
  • 4 tablespoons Nature's Hollow sugar free maple syrup
  • 3 egg yolks
  • 1 ½ teaspoons cinnmaon
  • 1 teaspoon vanilla
  • cinnamon and swerve to sprinkle on top (optional)
  • 1 tablespoon Great Lakes unflavored gelatin (red canister)

Instructions

  1. Pour ¼ cup of almondt milk in a bowl and sprinkle the gelatin on top to bloom.

  2. Pour the rest of the almond milk, heavy cream, syrup, egg yolks and cinnamon in a pan and heat over medium low heat. Keep whisking until sides start to bubble.  If the heat is too high the eggs will scramble. You just want the mixture to be hot enough to dissolve the gelatin in the next step.

  3. Take it off the stove.

  4. Whisk the heated mixture into the gelatin mixture along with the vanilla. Then pour into ramekins or small bowls. This recipe filled 3 large ramekins.

  5. Refrigerate for 2 hours until it sets.
  6. Sift a mixture of cinnamon and sweetener on top if you like added sweetness. (I did.)
