Salsa Verde (using tomatillos)

Ingredients

  • 1 lb tomatillos with husks off
  • ½ large onion chopped
  • 2 small jalapeños chopped
  • 1 teaspoon crushed garlic
  • 2 tablespoons cilantro chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • salt and pepper to taste
  • 2 cups of water

Instructions

  1. Place all ingredients in a pot and simmer for about 10 minutes until the tomatillos are tender.
  2. Let cool and then place in a blender or food processor.
  3. Cook in batches if you need.
  4. Process til desired consistency.
  5. Refrigerate when finished.
  6. Eat with chips or use in other recipes such as my Cuban Pot Roast.
