Avocado Lime Dressing

This is a delicious, fresh and tangy dressing that can also be used as a dip or topping for meats. The avocado creaminess tastes great with Mexican fare as well.

Ingredients

  • 1 ½ avocados
  • ¼ cup lime juice
  • ¼ cup olive oil
  • ¼ cup water
  • ½ teaspoon crushed garlic
  • ¼ cup cilantro
  • teaspoon cumin
  • teaspoon pepper
  • ¼ teaspoon salt

Instructions

  1. Add all ingredients to a blender or food processor.
  2. Process until smooth.
  3. Refrigerate for up to a week.
  4. Use as a dressing or dip or even for onto of fish, chicken, pork or beef.
  5. Try it on sandwiches too!
