Low Carb Zucchini Soup Recipe

If you have lots of zucchini growing in your garden, you will want to try this low  carb zucchini Soup. It's super easy to make and tastes delicious.  Best of all you can make it in less than 15 minutes and it has only 4.8g net carbs.

Ingredients

  • 2 cups chopped zucchini
  • 2 tablespoons dried minced onion
  • 1 cup boiling water
  • 1 teaspoon chicken better than bouillon
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • teaspoon pepper
  • ¼ teaspoon thyme
  • ½ cup sharp cheddar cheese divided in two

Instructions

  1. Add chopped zucchini and dried minced onion to a microwave bowl and mix. Microwave for 4 minutes then add to a high speed blend.

  2. While the zucchini is cooking, mix the Better than Bouillon with the boiling water and then pour it in the the blender.

  3. Add the spices, olive oil and half of the cheese.

  4. Blend on high until smooth and creamy. Be care because the contents will be very hot!

  5. Add remaining cheese on each bowl before serving. Can also use sour cream.
