Bacon Wrapped Stuffed Jalapeños

These bacon wrapped cheese stuffed jalapeños are a delicious low carb and Paleo appetizer or snack. So easy to make and you can even freeze them and cook later.

Ingredients

  • 22 jalapeños sliced lengthwise in half
  • 4 oz cream cheese softened
  • ½ cup shredded cheddar cheese
  • 7 pieces of center cut bacon cut in half lengthwise, then cut again widthwise (4 pieces per slice of bacon)

Instructions

  1. Preheat oven to 350.
  2. Cut your jalapeños in half and clean out the seeds and ribs.
  3. Mix your cream cheese and cheddar cheese together in a mixing bowl.
  4. Stuff each pepper half with the cream cheese mixture.
  5. Cut each slice of bacon in half length-wise and then in half width-wise.
  6. Wrap each pepper with the cut pieces of bacon.
  7. Place on a cookie sheet that has been sprayed with cooking spray.
  8. Cook 15-20 minutes or until the bacon is too your liking.
