Roasted Garlic Vegetables
These easy roasted garlic vegetables are easy to make and so versatile. Can be a side dish or tossed with pasta, rice or even added to a salad.

of raw vegetables cut up
I used carrots, peppers, red onions, radishes, mushrooms, turnips, broccoli, zucchini

olive oil

thyme

Preheat oven to 400 degrees.

In a large mixing bowl, mix together all the vegetables, garlic cloves, olive oil, salt, pepper and thyme.

Spread evenly on a greased cookie sheet.

Bake for 30 minutes or vegetables are nice and browned.

Serve as a side dish, or with pasta or rice.
