Arugula Couscous Salad

This arugula couscous salad is fresh, tasty and hearty. Perfect for a picnic, summer party or just eat it for lunch.

Ingredients

  • ¼ cup red onions thinly sliced
  • 2 cups of cooked couscous pearl couscous
  • 1 cup arugula tightly packed
  • 1 cup marinated peppadew peppers chopped
  • ½ cup Asiago cheese shredded
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • teaspoon pepper
  • ¼ teaspoon crushed garlic
  • ¼ teaspoon dried mustard
  • 2 Tablespoons white balsamic vinegar
  • ¼ teaspoon thyme

Instructions

  1. Cook your pearl couscous according to instruction and let cool.
  2. Add your couscous, onions, arugula and peppers to a large bowl and mix.
  3. In a bowl, whisk together the vinegar, olive oil, salt, pepper, garlic, mustard and thyme.
  4. Add the dressing to the bowl and mix to combine.
  5. Sprinkle cheese on top and serve or refrigerate.
