Ingredients

  • 3-4 carrots made into noodles
  • cup feta cheese
  • ¼ cup pine nuts toasted
  • 1 cup packed baby spinach leaves chopped
  • ½ lemon zested
  • 2 lemons juiced or ⅓ cup
  • cup olive oil
  • 1 clove of garlic crushed
  • ¼ teaspoon oregano
  • ¼ teaspoon salt
  • teaspoon pepper

Instructions

  1. In a large bowl, mix your carrots, spinach, feta and pine nuts.
  2. In a small bowl, whisk lemon juice, lemon zest, olive oil, garlic, oregano, salt and pepper.
  3. Start with about half of the dressing to toss with the salad. I only used half but you can taste and add more if you like.
  4. Serve and enjoy!
