Ingredients
3-4carrotsmade into noodles
⅓cupfeta cheese
¼cuppine nutstoasted
1cuppacked baby spinach leaveschopped
½lemon zested
2lemons juiced or ⅓ cup
⅔cupolive oil
1cloveof garliccrushed
¼teaspoonoregano
¼teaspoonsalt
⅛teaspoonpepper
Instructions
In a large bowl, mix your carrots, spinach, feta and pine nuts.
In a small bowl, whisk lemon juice, lemon zest, olive oil, garlic, oregano, salt and pepper.
Start with about half of the dressing to toss with the salad. I only used half but you can taste and add more if you like.
