Greek Grean Bean Salad

This Greek green bean salad is the perfect summer salad. Using vegetables from your garden or farmer's market, you can make this delicious vegetarian salad in minutes.

Ingredients

  • 4 cups of green beans trimmed and washed
  • 2 roma tomatoes finely diced
  • ½ red onion thinly sliced
  • 1 shallot
  • 2 cloves of garlic
  • ¼ cup wine vinegar
  • ½ cup olive oil
  • 1 teaspoon oregano
  • ¼ teaspoon salt
  • teaspoon pepper
  • zest of 1 lemon
  • juice of 1 lemon
  • ¼ cup of crumbled feta or more if you wish

Instructions

  1. Microwave beans for 5 minutes. Take them out and let cool.
  2. In the meantime add the shallot, garlic, vinegar, olive oil, oregano, salt, pepper, lemon juice and lemon zest to a food processor and blend on high for a few seconds.
  3. Add the beans, onions and tomatoes to a large bowl and mix with the dressing.
  4. Top with the feta cheese and refrigerate until ready to eat.
  5. Holds up well the next day too!
