Keto Strawberry Ice Cream Recipe

This keto strawberry ice cream recipe only needs 4 ingredients to create creamy, delicious ice cream. This healthy sweet treat is also high protein, low calorie and low fat!

Ingredients

  • 1 Fairlife Vanilla Shake
  • 1 tablespoon sugar free vanilla pudding mix
  • 1/2 cup strawberries, frozen
  • 2 tablespoons Torani sugar free strawberry syrup*

Instructions

  1. Add all of the ingredients to a high speed blender or food processor and blend until the strawberries are pureed. Taste and make sure it is sweet enough. When the base freezes it tends to lose some of the sweetness so make sure it is very sweet.
  2. Pour ice cream base into the Ninja Creami pint container and put the lid on. Place in the freezer for 20-24 hours to freeze. Make sure to place in on a flat surface in the freezer so it doesn't freeze on an angle.
  3. The next day, take the pint container and place in the outer bowl assembly. Attach the outer bowl lid and place in the Ninja Creami machine. Press the Lite Ice Cream button.
  4. When done, check to see if it is creamy. If not run it through this cycle 2-3 more times until it's the ice cream consistency you like. If after then 3 time it is still crumbly, just add a tablespoon or two of almond milk, coconut milk or unsweetened coconut cream. Run it through the cycle again and it should be fine.
  5. When done, spoon the homemade strawberry ice cream into a bowl and enjoy! Store leftovers in the same pint container with it's lid and freeze. When you want to eat it again just run it through the machine again. Or let it thaw for a little bit.
  6. To make this without the Ninja machine: You can use this base recipe and make it in a traditional machine but you won’t get as creamy of a texture as this one. It will still taste good though. Just mix the ingredients together and pour into your ice cream maker. Follow the manufacturers instructions.

Notes

* You can substitute any kind of sweetener you want. I like the added strawberry flavor of the Torani syrup but regular sweetener will be fine.

If you can find Fairlife Strawberry protein drink that would be even better for this recipe and you won't even need the frozen fruit. For other substitutions please see the post.

You can add more fresh strawberries to this recipe. Just chop up fresh strawberries and when you get the texture you like, put them in and use the mix it button. It softens up a bit more but is still very delicious!
