This low carb cheeseburger & cauliflower casserole is a delicious recipe and pure comfort food. Freeze individual servings for a quick low carb lunch. Only 1.9g net carbs per serving.

Ingredients

  • 1 pound ground beef
  • 2 cup cauliflower, chopped
  • 2 teaspoon steak seasoning
  • 1/4 cheddar cheese, shredded
  • 1 tablespoon butter, melted
  • 4 oz cream cheese, cut into cubes
  • 2 eggs
  • 1/2 cup heavy cream
  • 1/2 cup cheddar cheddar cheese, shredded

Instructions

  1. Preheat oven to 400 degrees F.
  2. Microwave the cauliflower for 5 minutes.
  3. In the meantime add the beef to a skillet and sprinkle steak seasoning on top.
  4. Once brown, add in cauliflower, cream cheese and 1/4 cup of cheddar cheese. M
  5. Mix well and then pour into baking dish.
  6. In a bowl, beat eggs then whisk in cream and butter.
  7. Pour over beef mixture and top with remaining 1/2 cup of cheese.
  8. Bake 30 minutes.
