ROASTED TOMATO PASTA SAUCE using FRESH TOMATOES

Easy to make with garden tomatoes and low carb too with just 4.3g net carbs per 1/2 cup of sauce.

You only need fresh ripe tomatoes, garlic, Italian seasoning, salt, black pepper and good olive oil.

Quarter the tomatoes and mix with the whole garlic cloves, olive oil and seasonings. Spread out evenly on a sprayed baking tray.

Roast them in a 375° oven for about an hour and they should look like this. Cooking times may vary.

Next mash them a bit with a potato masher or hand blender and you have roasted tomato sauce! The texture of the finished sauce should be a little chunky.

You can use this sauce on pasta, spaghetti squash and pizza.  It’s also delicious as dipping sauce with fried zucchini, cheese sticks or just with a piece of bread.
