THAI CURRY PUMPKIN SEEDS

These easy roasted pumpkin seeds are full of Thai red curry spices and absolutely delicious as well as low carb!

All you need is: Thai curry paste - I like Mae Ploy or Thai Kitchen brands coconut oil brown sugar sweetener - I use Swerve brown raw pumpkin seeds

Melt coconut oil in the microwave and  add the curry paste and sweetener and mix well. Mix pumpkin seeds with oil mixture and place on a cookie sheet.

Sprinkle salt all over the pumpkin seeds. Bake in a 350°F oven for 30 minutes until nice and crispy. Let cool before eating.
