I bought a 4.5lb rib roast to feed 4 of us and it was more than plenty. The app helps you figure out how many people to feed too.

I used salt, oregano, rosemary, basil and thyme and rubbed all over roast. Then cover with plastic and refrigerate overnight.

Sit out for 1/2 hour then sear the roast in a 450°F oven for 15 minutes. Lower the temp to 325°F for 2 hours. Rest for 15 minutes before carving.

Meanwhile make the beet horseradish sauce. Peel the horseradish root and cut into big chunks. Then grate it using a food processor or hand grater.

MYLIFECOOKBOOK

Add the beets, beet juice, vinegar, sugar and salt. Use the grating blade on the food processor for the horseradish then switch to the standard blade for this.
