EASY MEXICAN BEAN SALAD

Perfect for picnics and parties. You can make it the night before in minutes. Even the leftovers are delicious!

Ingredients are black beans, cooked corn, sweet bell peppers, red onions (or green onions) and fresh cilantro tossed in a Mexican dressing.

For the dressing I used fresh lime juice, olive oil, fresh garlic, cumin, salt and chili powder. It’s zesty rather than sweet. The peppers and corn add enough sweetness.

Just chop the vegetables and place in a big bowl with the corn and black beans. Whisk the dressing then toss with the rest of the ingredients.

Refrigerate for a few hours until ready to eat. You can even make this the day before.
