instant pot leg of lamb

Studded with garlic & coated in fresh rosemary, this tasty lamb dinner is super easy in the Instant Pot.

What you need is a leg of lamb roast, garlic, rosemary, olive oil, salt and pepper. Carrots and potatoes optional.

Cut slits in lamb and stuff garlic slivers in. Mix spices & oil and rub over the lamb. Place in a large baggie and refrigerate over night.

Heat up the Instant Pot using saute function on high. Add a little oil and brown the roast. Then hit the cancel button.

Add the water. Secure the lid and manually cook for 50 minutes. Quick release pressure and add veggies. Cook for 10 minutes more and let pressure come down naturally.

Let rest for 10 minutes then slice. Lamb should be nice and tender. You can set it under the broiler for a few minutes to brown if you want.

If you want a more chewy lamb cook for 50 minutes total instead of 60 minutes. Add the veggies in the last 10 minutes.
