easy chicken enchiladas

Using rotisserie chicken and a few simple ingredients you can make a tasty weeknight dinner.

All you need are: • corn tortillas • rotisserie chicken  • Monterey Jack cheese • sharp cheddar cheese  • onion •canned green chiles  • canned enchilada sauce.

Make the filling by mixing onion, green chiles, shredded chicken and Monterey jack cheese.

Dip the tortillas in the enchilada sauce. Then fill with some chicken mixture, roll and place in a baking dish seam side down.

Cover the wrapped enchiladas with more red enchilada sauce and then top with shredded cheddar cheese.

Place the pan of enchiladas in a 350°F oven and bake for 30 minutes until browned and bubbly.

You can top them with sour cream, guacamole or cilantro if you want. We just like them as is.

Freeze leftovers in an air tight container. The whole recipe makes 12 enchiladas so you can freeze a few for a quick lunch.
