This easy low carb dinner of balsamic chicken with onions and mushrooms will soon be a family favorite. It is a flavorful dish with creamy caramelized onions and earthy mushrooms sauteed with tender chicken thighs. This is a healthy low carb dinner that everyone will love with only 6.1g net carbs!

A week or so ago, I made a bacon cheese burger with balsamic onions. I was hooked on the balsamic onions because they were sweet and tart and added layers of flavor to the burger. So today I decided to make this easy low carb chicken with onions and mushrooms skillet dinner using the same balsamic onions.
It was a hit! The mushrooms also taste delicious with balsamic vinegar, heavy cream and butter which created a light and creamy sauce. I will have to make mushrooms like this as a side dish some day soon.
I also like this delicious recipe because it’s low carb too with only 6g net carbs! And it’s great for a busy weeknight dinner because it’s very easy to make.

I have a quite a few chicken recipes using primarily thighs. I usually have some thighs in the freezer and it’s easy to make a quick dinner with them.

- bacon wrapped thighs in the air fryer
- skillet chicken thighs with creamy spinach and mushrooms
Recipe ingredients I used.
You only need a few simple ingredients to make this dish. I used boneless skinless chicken thighs, yellow onion, white mushrooms, balsamic vinegar, butter, olive oil, heavy cream, Better than Bouillon chicken base, salt and black pepper.
I love the flavor Better than Bouillon bases ads to the dish but you can also use chicken broth or stock. Also which I used thighs you could also use skinless chicken breast in this recipe.
The balsamic vinegar adds a bit of wine flavor without using actual wine! That being said you could substitute with white wine if you wanted.
How to make balsamic chicken with onions and mushrooms.
Step 1: Get out a large skillet and heat to medium high heat. Add the oil and then add the thighs. Turn the heat down to medium heat. Brown the thighs for about 3-4 minutes on each side. Take out the chicken pieces and set aside.
Step 2: Next start caramelizing the onions. Add the butter to the pan and let it melt. Then add the onion slices and sauté until they become translucent. Next add the fresh mushrooms and cook until both have a golden brown color.
Step 3: Add in the balsamic vinegar to the onion mixture and a tablespoon of heavy cream. Mix well to combine.
Step 4: Mix Better than Bouillon with water to make broth. Return chicken thighs to the mushroom and onion mixture and then pour the bouillon mixture (or just use ½ cup chicken stock) over everything.
Cover with a lid and cook for 10 more minutes until the meat is cooked through. The internal temperature should be 165°F when using a meat thermometer. Cooking times may vary.
Step 5: Take off the stove and serve. You can add a little fresh parsley and fresh thyme if you want as a garnish but I did not.

Low carb side dishes to serve with this dish.
You can eat this as is for a low carb dinner or with cauliflower rice or just a steamed vegetable and green salad. Our favorite vegetables to eat are snap peas, asparagus or just broccoli.
If you are eating this as is, it would taste great with this low carb cheesy cauliflower casserole or this low carb spinach cauliflower rice pilaf. Both are pretty easy to make and would go good with this delicious recipe.
But if you don’t care about carbs try this delicious lemon herb rice, air fryer diced potatoes or this olive and date rice recipes.
You can also make some egg noodles or other pasta to go with this dish. Sometimes I place the noodles in a large serving bowl and then just spoon everything from the skillet over top the noodles. The caramelized onion sauce with the mushrooms is really flavorful.

Low Carb Balsamic Chicken with Onions and Mushroom Recipe
This skillet balsamic chicken with onions and mushrooms has amazing flavor with the creamy sweet onions, earthy mushrooms and juicy chicken thighs. This is a low carb meal that will everyone will love with only 6.1g net carbs!
Ingredients
- 1 tablespoon oil
- 2 onions, thinly sliced
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 2 tablespoons balsamic vinegar
- 6 chicken thighs, boneless, skinless
- 1 tablespoon heavy cream
- salt and black pepper to taste
- 1 teaspoon Better than Bouillon chicken base mixed with ½ cup water (or just use ½ cup chicken broth)
Instructions
- Get out a large skillet and heat to medium high heat. Add a tablespoon of oil to a pan and turn the heat down to medium heat. Place the thighs in the skillet and brown for about 4 minutes on each side until they are a golden color.
- Take the thighs out of the pan and set aside. Add the butter and onions and cook until they are soft and translucent and starting to brown. This will take about 15 minutes.
- Add the fresh mushrooms and cook for another 5 minutes until they are browned well.
- Mix Better than Bouillon with water and add in the balsamic vinegar, and heavy cream and combine. You can sub broth for the bouillon and water if you want.
- Nestle the thighs on top, cover and cook for 10 more minutes until the chicken is cooked through. The internal temp should be 165°F when using a meat thermometer. You can add a little fresh parsley or fresh thyme if you want as a garnish.
- Serve as is, over cauliflower rice to keep it low carb or over butter noodles if you don't care about carbs. Store leftovers in an airtight container or cover with plastic wrap.

Hi Heather, I think it would work just fine with chicken breasts. Depending on the size of pieces of chicken it might take a bit longer or shorter to cook. I hope you like it!

I loved it . It was so easy 9 ingredients. The balsamic vinegar adds nice taste, not overwhelming at all .I only had breast cutlets which worked out fine .I sliced cutlets into thinner pieces instead of thick cutlet.It was tender .I will try with boneless thighs .

I don’t know why I keep forgetting to be more specific with the cream. It’s heavy whipping cream. I only used 1 tablespoon so you could sub sour cream or half and half if you wish. It should alter the nutrition much at all.
