I was never much of a biscuit fan when I was younger, but in the summer they just seems to go with barbecues and other picnic food. When I first saw this recipe I was instantly craving biscuits. Especially good cheesy biscuits. So this was a keeper for me.
I found this wonderful recipe on All Day I Dream About Food. Great name for a site huh?! Well the bread is more like a biscuit flavor to me and I’m sure they would make a great biscuit if you shaped them right or put them in a muffin tin. I do not have a cast iron skillet so I ended up making this in a pie dish. This bread is very filling and addictive so I usually end up eating just one and freezing the rest. I don’t trust myself. Then I pull a piece out and pop it in the microwave to reheat it when I want it. Easy Peasy.
Recipe: Low Carb Cheesy Skillet Bread
Ingredients
- 2 cups almond flour
- ½ cup flax seed meal
- 2 tsp baking powder
- ½ salt
- 1 ½ cups cheddar cheese
- 3 eggs
- ½ butter
- ¾ almond milk
Instructions

Preheat oven to 425 degrees.

Spray pie pan with cooking spray.

In a bowl, mix almond flour, flax meal, baking powder, salt and 1 cup cheese.

In a separate bowl melt butter. Let it cool a few minutes and then add beaten eggs and milk.

Add dry ingredients to wet ingredients and mix to combine.

Pour into pie plate and sprinkle remaining cheese on top.

Bake for 15-20 minutes so that the top is golden brown.

Let cool for 15 minutes.
