This was my lunch today (MLT). Sometimes I don’t have the time to cook something healthy and delicious for lunch so I reach for my standbys: salmon burger and avocado. There isn’t much cooking involved but it’s super healthy, delicious and easy to whip up when you don’t have much time. Costco’s carries fab salmon burgers in the freezer section that I always have on hand. All you have to do is heat them up in a pan and you can eat them as is. Many times I will crumble one over a big green salad but today I had a nice, ripe avocado that would be a perfect compliment. Â Just a few grinds from my Trader Joe’s sea salt grinder and I was good to go.
The salmon burger has a whopping 20g of protein and just 2g of net carbs and the avocado has  2g of protein and 2g of net carbs. High in protein and low in carbohydrates, but more importantly salmon is high in omega-3’s and the avocado is loaded with beneficial fats, nutrients and fiber.
So next time you are in a hurry for lunch, keep these two ingredients on hand for a healthy, satisfying low carb lunch.
