Low Carb Mediterranean Fish Dinner – Healthy Dinner In 20 Minutes!

I threw this together for dinner tonight and boy was I happy at how delicious it turned out! Using just items I had on hand I whipped up this easy low carb Mediterranean fish dinner in less than 20 minutes. 

The best part was my husband raved about how good it was. I think he thought it took a lot of effort on my part and I wasn’t letting on that it didn’t. 😉  So if you are looking for easy fish dinner recipes, give this one a try. Bonus: It has only 5.9g net carbs too!

Ingredients For This Easy Fish Recipe 

This dish is very much like my Tuscan Chicken dish pictured below. I just substituted fish for the chicken and add some fresh spinach. With this dish, I used items I always have on hand:  frozen tilapia, a jar of Aldi’s artichoke salad, sundried tomatoes, capers, garlic and fresh spinach. The artichoke salad was similar to this but I bought mine at Aldi.

 

This is a similar dish using chicken instead of fish.

 

A Delicious Fish Dinner In 10 Minutes

This tilapia dinner took about 10 minutes to make while the rice takes about 20 minutes. If you are low carb you can use cauliflower rice and it will take even less time!  So a delicious fish dinner was made in less than 2o minutes. How great is that!

 

Mediterranean Fish Recipe

First you thaw the fish and pat dry. I used frozen tilapia but you could use fresh fish obviously or any kind of mild white fish. I only had 3 loins but normally I would have used 4.  Melt some butter in a pan over medium high heat.

Brown the fish on both side for about 2 minutes. Next pour the whole jar of artichoke salad over the fish. Add your fresh chopped spinach, capers, garlic and sun dried tomatoes.

This is what your dish looks like when you add all the ingredients. Looks good already huh.

 

Cover and cook over medium heat for 5 – 10 minutes.

This is what it looks like when it’s finished. That is all there is to it. Told you it was easy!

Here’s This Easy Mediterranean Fish Dinner In A Nutshell:

  1. Pat dry the fish filets or loins. I used thawed tilapia.
  2. Melt some butter in a pan over medium high heat.
  3. Brown the fish on both side for about 2 minutes.
  4. Next pour the whole jar of artichoke salad over the fish and add chopped spinach, capers, garlic and sun dried tomatoes.
  5. Cover and cook for 5-10 minutes
  6. Serve as is or over rice or even cauliflower rice.

My husband ate it over rice but you could eat it as is for a low carb dinner or even with cauliflower rice.

Also you could add some feta cheese on top which I think that would be tasty too! I’m always looking for easy fish dinner ideas so when I find one as easy as this it becomes a regular for us. I hope you like it as much as my family did. Enjoy! The nutritional information for 1 serving is:

Easy Peasy Mediterranean Fish Dinner

Ingredients

  • 1 Tablespoon butter
  • 1 lb of white fish, I used frozen tilapia
  • 12 oz jar Aldi artichoke salad or other brand equivalent
  • â…“ cup sundried tomatoes chopped
  • 1 cup densely packed fresh baby spinach, chopped
  • 1 teaspoon crushed garlic
  • 2 Tablespoons capers

Instructions

  1. Thaw fish if frozen and pat dry.
  2. Melt the butter in a sauté pan over medium high heat.
  3. Add fish and brown or 2 minutes on each side.
  4. Add all the ingredients, over and cook for 5-10 minutes over medium heat.

  5. Serve over rice, cauliflower rice or eat as is.

    Very good. We only had two talapia left so enhanced this with shrimp as well as Kalamata olives. Superb!

    I make this dish on a weekly basis. My 6 & 3 year old love it with rice, as does my husband. It has so much flavor and depth to it and the tilapia doesn’t taste fishy at all. Being a full time working mom with tons of after school activities because my kiddo is involved in his community, I don’t have time to cook a dish that will take an hour. This dish is done in 20 mins! The longest part was thawing the fish. This is my kind of dish…time sensitive dishes!! I do season my fish with Slap Ya Mama seasoning as it gives it that extra pop in your mouth and a hint of spiciness. Other than that I follow the recipe to a T…well, I always double the recipe for lunch the next day. I personally recommend this to anyone and everyone who likes quick, light and flavorful meals!

      Hi Susan, you could use any mild white fish and it should work out fine. Just make sure it cooks all the way through. Tilapia is very thin. Hope you like it!
