I’ve always been fond of chicken salad but never seemed to make it. Probably because I’ve liked so many variations of it. There is the creamy, shredded chicken salad I had when I lived in rural PA. I also used to love a tarragon and cashew chicken salad from a small ice cream shop when I was in college. And let’s not forget my favorite; a lemon chicken salad I had at a shower once. This is pretty close to that one. The lemon and herbs really give it a fresh taste, like summer and the almonds give it some crunch. I’ll be making this one a lot and maybe tackle those other ones later in summer….
