Over the years I’ve come to love a good hamburger. I mean a really good hamburger made with good meat and quality toppings. And when you are on a low carb diet, these burgers make a great dinner that both my family and I enjoy. Recently on a food shopping trip in the Strip district, my friend Lisa took us to Cafe Raymond for a bistro burger. It was seriously the best burger I ever had. Today I give you my version with this bacon cheeseburger with balsamic onions & garlic aioli. It was sooooo good. I nixed the bun and was in total heaven.
Don’t you just love the combination of bacon and cheeseburger? I have a made many low carb recipes like my bacon blue cheese burger stuffed portobello, bacon blue cheese burger salad and bacon cheeseburger frittata. That’s quite a range of food canvases for these ingredient! But in this burger the balsamic onions make it. I had a some left over and ate them on my salad. I will be making a chicken dish this week with mushrooms and these onions so look out for that post.
And so this is how I ate my burger … without the bun. I did not miss it at all. There is so much flavor in the other ingredients that you don’t really need it. My burger is not exactly like Cafe Raymond’s in that they had wilted spinach and I will try that next time.

- 2 tablespoons of butter
- 2 large onions, sliced
- ⅛ cup balsamic vinegar (2 tablespoons)
- 1½ lb ground beef
- ¼ cup mayo
- 1 clove garlic, crushed
- 6 slices of Swiss cheese
- 12 pieces of bacon
- 1½ cup baby spinach leaves
- Mix garlic and mayo and store in the refrigerator until ready to eat.
- Add butter and onions to a large saute pan on medium heat.
- Cook onions until brown and caramelized - about 30-40 minutes.
- Add the balsamic vinegar and cook for another minute or two.
- In the mean time cook your bacon and grill the burgers.
- Two minutes before burgers are done, add a slice of Swiss cheese and let melt.
- When onions are done, build your burger with spinach on the bottom, burger, bacon, onions and then a dollop of garlic aioli.
