Butternut squash noodles are delicious, especially with Italian sausage and broccoli. A healthy, grain free meal that you’ll love.
Did I tell you I got a new spiralizer for Christmas? I now have 3 different models. But I use them so it’s ok. I had two butternut squashes sitting on my counter and thought what could be tastier than some butternut squash noodles? Well add some Italian sausage and broccoli and you do have something tastier. The best part is that this only took 25 minutes from start to finish and that is probably an overestimate. So it’s easy, tasty, healthy and quick. That’s the making of a great recipe in my book.
First let’s talk about the spiralizer. I have a julienne peeler from a Pampered Chef party that I use a lot but my first spiralizer was called Saladacco Spiral Slicer. This works great but it makes a thinner noodle like an angel hair pasta. There are instances when I’ve liked that but I really wanted a spiralizer that would make a spaghetti size noodle and from what I read the Paderno Spiral Vegetable Slicer is supposed to be the best and that is what I got for Christmas. Yay! For the butternut squash noodles I wanted a thicker fettuccine type noodle and luckily there are options available for different noodle sizes with this spiralizer. On to the recipe.

First make your noodles any way you want. Half of my butternut squash came out to 4 cups. There was enough for 4 generous portions. After you make the noodles, brown the sausage in a skillet but first take off the casings. In the meantime microwave the noodles for 2 minutes. I put mine in a pyrex measuring cup. Once those are done, I microwaved the broccoli for 4 minutes. When the sausage is done, set it aside. Use the same skillet and add olive oil and garlic and saute for 1 minute. Then add your butternut squash noodles, broccoli, salt and pepper and saute for a few minutes. Lastly add back your sausage and cook for 1 more minute and you are done. Garnish with some grated cheese if you wish.
How easy was that! Since my hubby doesn’t like any type of squash and I didn’t even bother asking my son, I had the whole thing for myself and ate it for 3 days. - 2 Tablespoons olive oil
- 4 cups of butternut squash noodles (use spiralizer to make)
- 2 cups broccoli (steamed)
- 2 sweet Italian sausage links
- 1 teaspoon crushed garlic
- ½ teaspoon salt
- ½ teaspoon pepper
- In a large skillet, take your sausage links out of the casings and crumble and brown.
- In the meantime add butternut squash noodles to a pyrex bowl and microwave for 2 minutes.
- When the sausage is browned, take out of pan and set aside.
- Using the same pan, add the oil and garlic and saute for 1 minute.
- Add your butternut squash, broccoli, salt and pepper and saute for a couple minutes.
- Add your sausage back to the pan and continue to cook for 1 minute.
- Serve and eat and enjoy!
