I love to cook but I hate to bake. I’m just not good at it. It’s so precise and finicky and I’m just not a details kind of girl. But I want to master making bread. There is something so homey and nourishing about baking bread for your family. The ingredients are so simple and inexpensive but it takes time and precise. Two things I’m admittedly not good with. SO, the Pinterest challenge continues as well as a baking challenge.
I’m trying to make dinner rolls as my son loves these and he’s the apple of my eye so I’ve got to learn how to make him some. My hope is to find a good recipe, master it and then make it gluten free. But I’m still at square one and this is my attempt at a good recipe.
I found this recipe through Pinterest and the website is Handle the Heat. My first batch was a disaster as I forgot to add the eggs and only remembered when it was almost done kneading. I ran out of flour so I had to run to the grocery store.
So as you can see I think these came out pretty well! They not only look great but they taste great AND they couldn’t be easier. Seriously. They were easy. The only thing I would change is that I should have made them longer and thinner. Also I would have baked them for the full 20 minutes. I have wonky oven so timing is difficult for me.
- ¼ cup luke warm water
- 1 cup warm milk
- 1 packet fast rising yeast
- 2 eggs beaten
- 2 Tablespoons butter, melted and divided
- 2 Tablespoons sugar
- 1½ teaspoons salt
- 20 ounces flour, Or approx. 4½ cups
- Combine water, milk, yeast, sugar, salt, eggs and butter in the bowl of your mixer. Add 2 cups of flour and mix by hand with a wooden spoon until it's well combined.
- Add bread hook to mixer and set to medium as you slowly add the rest of the flour. Then increase speed to medium high and knead doug for about 5 minutes.
- Dough should be soft and smooth; elastic and tacky to the touch. Mine was a bit to sticky so I add 1 T of flour and mixed again. This is something that I think you need to learn from experience.
- Spray a clean bowl with cooking spray and place dough in bowl and roll around to oiled on all sides. Cover with plastic wrap and leave out for about 1 hour so that it's doubled in size.
- Cut dough into 12 pieces and form into rolls. Place each in a greased 13 x 9 cooking dish. Brush remaining melted butter on top and then cover dish with plastic. Let sit for 30 minutes.
- Preheat oven to 375 degrees. Once rolls have set, place in oven and cook for 15-20 minutes. Should be brown on top.
